Mediterranean quinoa salad recipe

Say goodbye to boring school or work lunches with this meal-prep friendly Mediterranean quinoa salad. The quinoa and chickpeas provide you with low releasing carbohydrates to keep your energy levels up all day and the addition of tahini (healthy fats) in the dressing provides a delicious, creamy flavour to the salad. Add in a source of protein such as grilled chicken, tempeh or lamb to make this salad even more filling. 

Mediterranean quinoa salad


  • ½ cup of uncooked quinoa
  • 1 cup of vegetable stock 
  • ¼ cup of chickpeas
  • 1 medium Roma tomato
  • 1 medium cucumber
  • A small handful of basil and mint 
  • 2 tbsp of walnuts
  • 1 tbsp of tahini 
  • A squeeze of ½ small lemon
  • ½ tbsp of extra virgin olive oil



  1. Cook quinoa in vegetable stock and allow to cool. Drain and rinse chickpeas
  2. Prepare the other components of the salad by dicing the tomato and cucumber and finely chopping the herbs and walnuts 
  3. In a small bowl, create the dressing by whisking the tahini, lemon juice and olive oil 
  4. Combine all ingredients in a bowl and top with “Earth seeds” before serving
