Ingredients:
2 medium ripe banana
1 cup buckwheat flour
1 tbsp ground flaxseed
1 tsp baking powder
1 tsp Baking soda
1 tsp vanilla extract
1 cup soy milk
1 tbsp luna’s gold
Topping ideas: Earth seeds, fresh berries, maple syrup, coconut yogurt, coconut flakes, cacao nibs, fresh flowers…
Optional blueberrie syrup:
- 1.5 cup frozen blueberries
- 1.5 tbsp chia seeds
- 1 lemon juice
- 4 tbsp water
- 1.5 tbsp maple syrup
Instructions:
In a bowl, using a fork mash the two bananas. Mix through the grounded flaxseed.
Add the baking powder, baking soda, flour, and vanilla extract. Mix well.
Stir in the milk and mix until thoroughly combined.
Pour a little bit of oil on a non-stick pan, and heat on low to medium heat.
Pour approximately ¼ cup of batter. Cook for a couple of minutes until bubbles are well-formed on the top, then flip the pancake. Cook for another 1 minute.
Taking your time and cooking the pancake on lower heat will keep them from browning too much and keep the bright green color.
Repeat with the rest of the batter.
Pile pancakes one by one onto your plate, add toppings and enjoy!
